How to Make Gluten Free Soft Sugar Cookies
Yield: 5-6 dozen
First, in a large mixing bowl, cream the butter and sugar until the mixture becomes light and fluffy. Then, beat in the eggs, vanilla, and almond extract (or more vanilla as a substitute,) until combined.
Combine the dry ingredients (flour, cream of tartar, baking soda, salt, and nutmeg,) in a separate bowl. Gradually add the dry ingredients to the creamed mixture and mix on low until combined.
Drop the cookie dough by rounded teaspoonfuls about 2 inches apart onto a baking sheet that has been lined with parchment paper or a silicone baking mat.
Bake at 350° for 8 to 10 minutes or until lightly golden brown around the edges.
Remove to a wire rack to cool completely before frosting.
Making Frosting for Soft Sugar Cookies
In a large mixing bowl, whisk the softened butter, powdered sugar, vanilla extract, and enough water to achieve desired consistency. If you would like to tint your frosting with food coloring, now is the time. After frosting the cookies with a spatula or a piping bag, decorate with sprinkles for the holidays as desired.
