3 pounds of potatoes (3-4 large, 5-7 medium, 7-9 small)
1/2 cup grated parmesan cheese
1 teaspoon dried basil
1 teaspoon sea salt
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
a dash of black pepper
1-2 tablespoons extra virgin olive oil
What Potatoes are the Best for Roasting?
Yukon gold is the best choice for roasting. They have a thin skin, hold their shape well when cut, and have a naturally buttery texture. If you can’t get gold potatoes, try red potatoes or russet instead.
How to Make Garlic Parmesan Roasted Potatoes
1. Preheat the oven to 400°F and line a baking sheet (mine is 12”x17”) with parchment paper or a silicone baking mat like this one.
2. Wash and dry the potatoes. After patting them dry, cut them into 1-1.5 inch pieces. Cut out and throw away any eyes/sprouts or green areas you might discover as you’re slicing (here’s why.) As they are cut, add them to a large mixing bowl.
3. After the potatoes have been cut, drizzle the extra virgin olive oil over the potatoes and then toss to coat.
4. Measure and dump the grated parmesan cheese, basil, garlic powder, onion powder, sea salt, and black pepper over the potatoes. Toss again to coat.
5. Lay out and arrange the potatoes evenly in a single layer on your baking sheet. Bake at 400°F for 30 minutes. Enjoy!
